Recipe For Arusuvai Pudalai
Ingredients:
Snake gourd | 180 grams |
Green chilli – deseeded and finely chopped | 20 grams |
Yellow capsicum – deseeded and diced | 20 grams |
Red capsicum – deseeded and diced | 20 grams |
Green capsicum – deseeded and diced | 20 grams |
Green coriander leaves – finely chopped | 10 grams |
Salt | To taste |
Turmeric powder | 2 grams |
Jaggery | 5 grams |
Fig – chopped | 10 grams |
Peppercorn | 2 grams |
Lemon juice | 5 ml |
Grated coconut | 50 grams |
Peanuts – roasted and crushed | 50 grams |
Ingredients for tempering:
Gingelly oil | 15 ml |
Mustard seeds | 3 grams |
Urad dal | 3 grams |
Red chilli | 2 grams |
Asafoetida | 2 grams |
Method:
- Peel and chop the snake gourd, and boil it in salted water.
- Strain, cool and keep aside.
- In a pan, heat the oil and add mustard seeds. Sauté.
- Add urad dal, red chilli, green chilli, asafoetida, turmeric powder, capsicum, and the cooked snake gourd.
- Add salt to taste and simmer to cook.
- To finish it off, add jiggery, fig, peppercorn, lemon juice and crushed peanuts.
- Mix well, garnish with coriander leaves and serve at room temperature.
